Right here in the Yass valley, our olives have one of the best growing environments in Australia. Cooler winter months with some rain, followed by warm summers with occasional showers, provide fantastic growing conditions for producing good olives. Harvesting through May is typical, though our microclimate at Hineni offers some protection from early frosts. The result is seen in the high-grade extra virgin olive green oil we produce.
For a culinary experience, you can’t go past a fresh sourdough chunk dipped in Hineni olive oil.
